  • 5 large strawberries πŸ“
  • 1-2 tbsp raw honey or 3-4 drops liquid stevia 🍯
  • 2 tbsp shredded raw beet

Directions:

  • Blend all ingredients on high for 45 seconds
  • Serve and enjoy!

Ingredients:

  • 2 cups oats
  • 1/2 cup shredded coconut
  • 3 tbsp flax meal
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 cup mashed banana
  • 1 1/4 cups Mac Nut Kiki Milk
  • 2 tbsp sunflower butter
  • Zest and juice of 1 lemon
  • Zest and juice of 1 orange
  • 3/4 cup blueberries

Directions:

  • Mix all dry ingredients in a mixing bowl
  • In another bowl, mash banana
  • Add all wet ingredients, mix, and pour over dry. Mix well to incorporate
  • Scoop 1/3 cup mix into muffin pan lined with baking cups or oil
  • Bake at 350 for 30 minutes, or until lightly golden on top, and the toothpick comes out clean
  • Let cool for 10 minutes in pan
  • Store in an airtight container for 2 days or in the refrigerator for up to 1 week.

Ingredients:

Green Curry Sauce:

  • 3 kefir lime leaves
  • 3 cloves garlic
  • 1/2 cup cashews
  • 1 1/2 cup Kiki Mac Nut Milk
  • 1 tbsp green curry paste
  • 1 tbsp coconut sugar
  • 2 tbsp unpasteurized chickpea miso
  • 1 tsp salt
  • 1/2 bunch cilantro
  • 1 lime, zest + juice
Butterfly Pea Jasmine Rice:
  • 2 cups jasmine rice
  • 1 cup butterfly pea concentrate*
  • 3 cups water
  • 2 tsp salt
  • 1 tbsp coconut oil
Butterfly Pea Concentrate:
  • 1/2 cup dried butterfly pea flowers
  • 2 cups water

Directions:

BowlΒ Prep:
  1. Make the sauce. Place all ingredients in a high-power blender and blend until smooth and creamy
  2. Make butterfly pea concentrate.Β Bring all ingredients to a simmer and cover, steep for 15 minutes, and strain before use.
  3. Make the rice. Place all ingredients for rice in a medium size pot. Bring to a boil, then reduce heat to low and cover. Cook for 18 minutes. Turn off the heat and allow the rice to sit covered for 15 minutes.
Bowl Assembly:
  1. To a bowl, add any or all of the following toppings:
  • Fresh leafy greens
  • Butterfly pea flower rice
  • Steamed broccoli
  • Steamed or raw shredded carrots
  • Red and yellow peppers
  • Sunflower sprouts
  • Avocado
  • Sprouted pumpkin seeds
  • Sesame seeds
  • Drizzle top generously with curry sauce and InJoy!
