Ingredients
- 1 large butternut squash, peeled and chopped
- 1 white onion, chopped
- 4 cloves garlic, chopped
- 4 cups veggie broth
- 2 cups Unsweetened Kiki Milk
- 6 sprigs fresh thyme, de-stemmed
- 3 tbsp avocado oil
- 1 1/2 tsp salt
- 1/8 tsp pepper
Directions
- Add oil to a large pot over medium heat. First add onion and sauté for 1 minute, then add garlic and thyme.
- Next, add squash and stir, sauté for another few minutes.
- Now add broth, salt and pepper
- Bring to a boil, then reduce heat to med low and cover pot. Cook for 20 minutes.
- Add unsweetened Kiki Milk and allow to cool for about 10 minutes.
- Transfer to blender and blend for about 30 seconds. Best to do this in a couple batches.
- Add salt and pepper to taste.
- Transfer to serving bowl. I love to top this soup with sprouted pumpkin seeds and yogurt.
